Ginger and Butternut Squash Tartlet

Makes 8-10 Tartlets
Instructies
Preheat the oven to 400°F.
Roast the butternut squash cubes for 40 minutes.
Add the roasted butternut squash to a blender or glass bowl.
If you're using a glass bowl, you will need an immersion blender.
Add salt, diced shallot, goat cheese, grated nutmeg, and fresh grated ginger to the bowl or blender.
Blend the mixture until smooth.
Pipe the filling into the tartlet shells.
Top the tartlets with additional goat cheese and parsley, if desired.
