Grapefruit, Orange, and Avocado Salad
Ensalada de Toronja, Naranja, y AguacateThe tartness of citrus fruits and the creaminess of avocado work ideally together. I like adding crunchy cabbage and dark green romaine lettuce to create this refreshing salad.

Makes 6 servings
- 4 cups shredded romaine lettuce
- ¼ medium head of cabbage finely shredded
- ¼ cup lightly packed chopped fresh cilantro
- 1 ruby grapefruit
- 2 navel oranges
- 2 avocados Hass variety preferred, peeled and diced (½ inch)
- ½ medium red onion very thinly sliced
- 2 tablespoons olive oil
- 1 teaspoon unseasoned rice vinegar
- ½ teaspoon salt or to taste
- ⅛ teaspoon freshly ground pepper or to taste
Instructies
- Put the cabbage, lettuce, and cilantro in a large bowl.
- Cover and refrigerate.
- Peel the grapefruit and the oranges and remove all the white pith.
- Cut into bite-size pieces and put in a medium bowl.
- Add the avocados, onion, olive oil, vinegar, salt, and pepper.
- Combine and let marinate for about 10 minutes.
- Add to the lettuce mixture and toss gently to mix.
- Serve.
