Grapefruit, Orange, and Avocado Salad

The tartness of citrus fruits and the creaminess of avocado work ideally together. I like adding crunchy cabbage and dark green romaine lettuce to create this refreshing salad.

Ingrediënten

Makes 6 servings

  • 4 cups shredded romaine lettuce
  • ¼ medium head of cabbage finely shredded
  • ¼ cup lightly packed chopped fresh cilantro
  • 1 ruby grapefruit
  • 2 navel oranges
  • 2 avocados Hass variety preferred, peeled and diced (½ inch)
  • ½ medium red onion very thinly sliced
  • 2 tablespoons olive oil
  • 1 teaspoon unseasoned rice vinegar
  • ½ teaspoon salt or to taste
  • teaspoon freshly ground pepper or to taste

Instructies

  • Put the cabbage, lettuce, and cilantro in a large bowl.
  • Cover and refrigerate.
  • Peel the grapefruit and the oranges and remove all the white pith.
  • Cut into bite-size pieces and put in a medium bowl.
  • Add the avocados, onion, olive oil, vinegar, salt, and pepper.
  • Combine and let marinate for about 10 minutes.
  • Add to the lettuce mixture and toss gently to mix.
  • Serve.
