- 1 small fresh zucchini unpeeled and diced
- 2 celery stalks with leaves finely chopped
- 2 small carrots peeled and diced
- 1 small onion minced
- 1 can 16 oz. whole tomatoes, cut up with a spoon
- 2 ½ cups water
- ¾ cup elbow macaroni uncooked
- ½ cup beef bouillon or tomato juice
- Salt to taste

Instructies
- Place kidney beans in a large kettle and mash them slightly with a fork.
- Add garlic, salt, pepper, olive oil, and chopped parsley.
- Stir well.
- Pour in water and add all vegetables to the kettle.
- Bring to a boil over medium heat, stirring occasionally.
- Reduce heat, cover the kettle, and simmer for 1 hour, stirring occasionally.
- After 1 hour, add macaroni and beef bouillon or tomato juice.
- Simmer for an additional 15 minutes, stirring occasionally.
- Add salt to taste.
