Lemon Steak with Parmesan Salad

Ingrediënten

  • 5 tbsps extra virgin olive oil plus
  • 1 tsp extra virgin olive oil
  • 1 tbsp fresh-squeezed lemon juice
  • 2 garlic cloves minced
  • 1 tbsp chopped fresh parsley
  • 1 tbsp chopped fresh oregano
  • salt
  • fresh coarse ground black pepper
  • 4 boneless strip steaks 1 to 1 1/4 inches thick
  • 8 C. loosely packed arugula washed and dried
  • 3 oz parmesan cheese cut into thin shavings

Instructies

To make the dressing:

  • Get a mixing bowl: Whisk the 5 tbsps of olive oil with lemon juice, garlic, parsley, oregano and a pinch each of salt and pepper.
  • Place a large skillet on medium to high heat.
  • Add 1 tsp of oil to it and heat it.
  • Season the steaks strips with some salt and pepper.
  • Cook them in the skillet for 7 min on each side.
  • Lay the arugula leaves in 4 serving plates then top them with the steaks strips, lemon dressing and cheese.
  • Serve your salads right away.
