Lemongrass Chicken Meatballs

Equipment

  • These chicken meatballs have an Asian flavor that your guests are
  • sure to love! This recipe pairs well with white wine.

Ingrediënten

  • 1 pound of ground chicken
  • 1 tablespoon of soy sauce
  • 1 tablespoon of Asian fish sauce
  • 1 tablespoon of minced lemongrass white portion only
  • 1 tablespoon of cilantro chopped
  • ½ tablespoon ginger
  • 1 garlic clove minced
  • Sea salt and ground pepper to taste
  • ¼ cup of grape seed oil
  • 14 small lettuce leaves
  • 4 green onions thinly sliced
  • 2 limes cut into wedges

Instructies

  • Preheat oven to 350° F.
  • Lightly grease a baking sheet.
  • Combine chicken, soy sauce, lemongrass, cilantro, ginger,
  • and garlic in a large mixing bowl. Season with salt and
  • pepper and mix well.
  • Roll the mixture into 1-inch balls. Place the balls on the
  • baking sheet.
  • Heat a large frying pan over medium heat. Pour the oil in
  • and heat until shimmering.
  • Add the meatballs to the pan and cook evenly on all sides.
  • This should take about 5 minutes total.
  • Drain using paper towels.
  • Return the meatballs to the baking sheet. Bake until
  • cooked thoroughly. This should take only 3 to 5 minutes.
  • Season the meatballs with salt and pepper.
  • Line a serving tray with the lettuce and lay the meatballs on
  • top. Garnish with green onions and lime wedges, and serve
  • immediately.
