Preheat oven to 350° F.
Lightly grease a baking sheet.
Combine chicken, soy sauce, lemongrass, cilantro, ginger,
and garlic in a large mixing bowl. Season with salt and
pepper and mix well.
Roll the mixture into 1-inch balls. Place the balls on the
baking sheet.
Heat a large frying pan over medium heat. Pour the oil in
and heat until shimmering.
Add the meatballs to the pan and cook evenly on all sides.
This should take about 5 minutes total.
Drain using paper towels.
Return the meatballs to the baking sheet. Bake until
cooked thoroughly. This should take only 3 to 5 minutes.
Season the meatballs with salt and pepper.
Line a serving tray with the lettuce and lay the meatballs on
top. Garnish with green onions and lime wedges, and serve
immediately.
