Ingrediënten
- 150 g ¾ cup nondairy white chocolate chips
- 84 g ¼ cup agave nectar
- 93 g ¾ cup macadamia nuts
- 397 g 14 ounces silken tofu, drained, patted dry, and cut into cubes
- 2 teaspoons pure vanilla extract
- 1 teaspoon grated lemon zest
Instructies
- In a microwave-safe bowl, combine the white chocolate chips and agave nectar.
- Melt in the microwave, stirring occasionally to prevent scorching.
- In a food processor, grind the macadamia nuts until they resemble a butter-like consistency and start to release their oil.
- This may take a few minutes.
- Add the melted chocolate, silken tofu, vanilla extract, and lemon zest to the food processor.
- Process until the mixture is perfectly smooth, scraping the sides occasionally.
- Divide the pudding among 4 small dessert dishes.
- Chill the pudding overnight to allow the flavors to develop.
