Ingrediënten
- 340 g 12 ounces firm or extra-firm regular tofu, drained, patted dry, and cut into cubes
- 120 g ½ cup nondairy sour cream (store-bought or homemade)
- 256 g 1 cup creamy no-stir sweetened peanut butter
- 1½ teaspoons pure vanilla extract
- 120 ml ½ cup pure maple syrup or 168 g agave nectar
- ¼ teaspoon fine sea salt
Instructies
- In a food processor, combine the tofu, nondairy sour cream, and peanut butter.
- Blend until smooth, scraping the sides occasionally.
- Add the vanilla extract, maple syrup (or agave nectar), and fine sea salt.
- Blend again until perfectly smooth, scraping down the sides as needed.
- Divide the mousse evenly among 8 small dessert dishes.
- Chill in the refrigerator for several hours or overnight before serving.
