Classic Margherita Pizza

Ingredients
- 2 tablespoons extra virgin olive oil
- ½ pound plum Roma tomatoes chopped into ½-inch pieces
- 1 clove garlic crushed and finely chopped
- ½ teaspoon salt
- 1 12- inch uncooked NY Style dough crust
- 6 ounces mozzarella cheese shredded
- 6 fresh basil leaves cut into julienne strips
- Extra virgin olive oil for drizzling
- ¼ cup fresh shredded parmesan cheese
Instructions
- Combine 2 tablespoons of olive oil, chopped tomatoes, garlic, and salt in a bowl.
- Allow to marinate while preparing the dough.
- Brush the pizza dough crust lightly with olive oil.
- Top the dough with shredded mozzarella cheese, followed by the marinated tomatoes.
- Drizzle additional olive oil over the toppings.
- Bake the pizza in a preheated 500°F oven on a pizza stone for 8–10 minutes, or until the crust is golden brown and the cheese is bubbly.
- Remove the pizza from the oven and top with parmesan cheese, followed by the fresh basil.
- Cool on a wire rack for 2–3 minutes before slicing into wedges and serving.
