Preparation Time: 8 to 12 hours in advance / Yields about 24 Tapas

  • 3 teaspoons mayonnaise mayonesa
  • 6 tablespoons extra-virgin olive oil
  • 3 tablespoons vinegar
  • A pinch of sugar
  • Salt
  • Freshly ground black pepper
  • 1 medium head of romaine lettuce using the green part only, shredded
  • 12 very thin slices of sandwich bread with the crust removed

Instructies

  • Place the mayonnaise in a small bowl.
  • Gradually whisk in the olive oil.
  • Add the vinegar, sugar, salt, and black pepper, and whisk until well combined.
  • In a large bowl, put the shredded lettuce, pour in the mayonnaise mixture, and mix thoroughly.
  • Cover and refrigerate for 8 hours, or overnight.
  • Spread the marinated lettuce mixture on 3 slices of bread and then place the other 3 slices on top.
  • Gently press down and cut each sandwich diagonally twice to create 4 triangles.

Serve the canapés cold. If they are not served immediately, you can wrap them loosely in a damp towel until ready to serve.
