Ingrediënten

  • 2 pounds pork loin boneless
  • ¼ cup olive oil
  • ¼ cup soy sauce
  • 2 tablespoons Dijon mustard
  • 3 tablespoons honey
  • 3 cloves garlic minced
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Fresh parsley chopped (for garnish)

Instructies

Prepare the Marinade:

  • In a bowl, whisk together olive oil, soy sauce, Dijon mustard, honey, minced garlic, dried rosemary, dried thyme, smoked paprika, salt, and pepper.

Marinate the Pork Loin:

  • Place the pork loin in a large zip-top bag or shallow dish.
  • Pour the marinade over the pork, ensuring it’s evenly coated.
  • Seal the bag or cover the dish and refrigerate for at least 4 hours, preferably overnight, turning the pork occasionally to marinate all sides.

Preheat the Oven:

  • Preheat the oven to 375°F (190°C).

Roast the Pork Loin:

  • Remove the pork loin from the marinade and place it on a roasting pan or oven-safe dish.
  • Roast in the preheated oven for approximately 30-40 minutes or until the internal temperature reaches 145°F (63°C).
  • Baste the pork with the marinade occasionally during roasting.

Rest and Slice:

  • Allow the pork loin to rest for 10 minutes before slicing.
  • Garnish with chopped fresh parsley.
