  • 2 tablespoons finely chopped onion
  • ¾ cup marinated tuna drained and flaked

For the Omelet:

  • 4 large eggs
  • Salt and freshly ground black pepper to taste

Instructies

Prepare the Tomato and Olive Sauce:

  • In a small saucepan, heat the olive oil over medium heat.
  • Add the finely chopped onion and sauté until it becomes translucent, which should take about 2-3 minutes.
  • Stir in the crushed tomatoes and chopped Kalamata olives.
  • Season with salt and freshly ground black pepper.
  • Reduce the heat to low, cover the saucepan, and let it simmer for 15 minutes or until it thickens slightly.

Sauté the Tuna Filling:

  • In a medium skillet, heat the olive oil over medium heat.
  • Add the finely chopped onion and sauté for 2-3 minutes until it becomes translucent.
  • Stir in the flaked marinated tuna and cook for about 5 minutes.

Prepare the Omelet:
