Ingrediënten

  • 2 pounds mussels
  • 2 tablespoons olive oil
  • ½ medium onion finely chopped (about ¼ cup)
  • 1 garlic clove finely chopped
  • ½ teaspoon all-purpose flour
  • 1 teaspoon ground bittersweet paprika such as Spanish smoked
  • ¼ teaspoon ground hot paprika such as Spanish smoked
  • ¼ cup dry white wine
  • 1 slice lemon
  • 2 tablespoons finely chopped fresh flat-leaf parsley
  • 2 bay leaves

Instructies

  • Rinse the mussels thoroughly, removing the beards.
  • Discard any mussels with cracked shells or those not closing tightly when touched.
  • Heat olive oil in a large skillet over medium heat.
  • Add onion and garlic, cooking until the onion is wilted and transparent, about 5 minutes.
  • Stir in the flour and paprika.
  • Add the wine, lemon, parsley, bay leaves, and mussels.
  • Reduce the heat to low, cover, and simmer, removing the mussels as they open, approximately 10 minutes.
  • Return the opened mussels to the skillet.
  • Discard any unopened mussels and the bay leaves.
