Ingrediënten
- 2 pounds mussels
- 2 tablespoons olive oil
- ½ medium onion finely chopped (about ¼ cup)
- 1 garlic clove finely chopped
- ½ teaspoon all-purpose flour
- 1 teaspoon ground bittersweet paprika such as Spanish smoked
- ¼ teaspoon ground hot paprika such as Spanish smoked
- ¼ cup dry white wine
- 1 slice lemon
- 2 tablespoons finely chopped fresh flat-leaf parsley
- 2 bay leaves
Instructies
- Rinse the mussels thoroughly, removing the beards.
- Discard any mussels with cracked shells or those not closing tightly when touched.
- Heat olive oil in a large skillet over medium heat.
- Add onion and garlic, cooking until the onion is wilted and transparent, about 5 minutes.
- Stir in the flour and paprika.
- Add the wine, lemon, parsley, bay leaves, and mussels.
- Reduce the heat to low, cover, and simmer, removing the mussels as they open, approximately 10 minutes.
- Return the opened mussels to the skillet.
- Discard any unopened mussels and the bay leaves.
