Old-Fashioned Vegetable-Beef Soup

Serves 8 to 10 / Preparation Time: 35 minutes / Cooking Time: 2 hours 20 minutes

  • cup all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon freshly ground pepper
  • 2 pounds beef stew meat
  • 2 garlic cloves minced
  • 3 tablespoons vegetable oil
  • 2 14-ounce cans beef broth
  • 1 cup Mirepoix
  • 2 cups peeled chopped potatoes
  • 1 28-ounce can crushed tomatoes
  • 1 16-ounce package frozen mixed vegetables
  • 1 16-ounce package frozen white shoepeg corn
  • 1 15-ounce can tomato sauce with garlic and herbs
  • 1 tablespoon Worcestershire sauce

Instructies

  • In a large zip-top freezer bag, combine the all-purpose flour, salt, and freshly ground pepper.
  • Add the beef stew meat and seal the bag.
  • Shake to coat the meat with the flour mixture.
  • Sauté the minced garlic in hot vegetable oil in a stockpot over medium-high heat for 1 minute.
  • Add the floured beef and cook for 8 minutes, stirring occasionally, until browned.
  • Add the beef broth, Mirepoix, and the remaining ingredients.
  • Bring the mixture to a boil and then reduce the heat.
  • Simmer for 1½ to 2 hours, or until the beef is tender.
