Oyster Fritters
A rémoulade or cocktail sauce complements these tasty fritters.

- 1 cup all-purpose flour
- 1 teaspoon salt
- ⅛ teaspoon ground red pepper
- ⅔ cup water
- 2 tablespoons butter or margarine melted
- 1 large egg separated
- Vegetable oil
- 3 8-ounce containers Select oysters, rinsed and drained
Instructies
- Combine flour, salt, and pepper in a medium bowl.
- Combine water, butter, and egg yolk in a small bowl, beating well with a fork.
- Gradually add egg mixture to dry ingredients, stirring until blended.
- Beat egg white until soft peaks form; fold into batter.
- Pour oil to a depth of 2 to 3 inches into a Dutch oven; heat to 375°.
- Dip oysters in batter; fry in batches in hot oil 2 to 3 minutes or until golden, turning once.
- Drain on paper towels.
- Serve immediately.
