Oysters Rockefeller
Fresh oysters can be found in the fresh seafood section of most supermarkets. If you are not game to shuck the oysters yourself, ask your fishmonger. This is generally a task that they will provide at no additional cost. Tell them to save the shells, though, so you can make this delicious dish!

- 1 ½ tablespoons butter
- 1 medium shallot peeled and minced
- 1 clove garlic peeled and minced
- 1 cup chopped fresh baby spinach
- 4 teaspoons grated Parmesan cheese
- ⅛ teaspoon Tabasco original hot sauce
- ½ teaspoon fresh lemon juice
- ¼ cup crushed garlic pork rinds
- 12 oysters on the half shell, rinsed and patted dry
Instructies
- In a small frying pan, heat butter over medium heat for 30 seconds.
- Add shallot, garlic and spinach.
- Stir-fry for 3 minutes until shallot is translucent.
- Add Parmesan cheese, Tabasco sauce, lemon juice and pork rinds to frying pan.
- Distribute mixture to tops of oysters.
- Preheat air fryer at 200°C for 3 minutes.
- Place half of oysters in ungreased air fryer basket.
- Cook for 6 minutes.
- Transfer cooked oysters to a large serving plate and repeat cooking with remaining oysters.
- Serve warm.
