Parmesan-Artichoke Crostini

Makes 12 appetizer servings

Prep: 20 min., Bake: 5 min.

  • 1 14-ounce can artichoke hearts, drained and chopped
  • 1 4.5-ounce can chopped green chiles
  • 2 garlic cloves minced
  • 1 cup grated Parmesan cheese
  • 1 cup light mayonnaise
  • ½ cup chopped pecans toasted
  • 40 ¼-inch-thick French baguette slices, toasted

Garnish:

  • Chopped fresh chives

Instructies

  • Stir together first 6 ingredients.
  • Spread 1 tablespoon artichoke mixture evenly on each bread slice, and place on ungreased baking sheets.
  • Bake at 400° for 3 to 5 minutes or until thoroughly heated.
  • Garnish, if desired.
  • Serve crostini immediately.

Notes / Tips / Wine Advice:

Parmesan-Shrimp Crostini:

Omit chopped artichoke hearts and chopped green chiles. Add 2 cups chopped cooked shrimp and 6 sliced green onions; proceed with recipe as directed.
