Perch with Martini Sauce

Serve this piquant fish dish over cooked rice or orzo, or pass sourdough bread for dipping into the sauce.

Ingrediënten

  • 1 tablespoon olive oil
  • 1 onion chopped
  • 1 garlic clove minced
  • 1 can 14 1/2 ounces diced tomatoes, undrained
  • ½ cup pimiento-stuffed olives sliced
  • 2 tablespoons gin
  • ¼ teaspoon salt
  • teaspoon pepper
  • 4 large perch fillets
  • 1 tablespoon minced chives

Instructies

  • Heat the olive oil in a large sauté pan.
  • Add the onion and garlic and sauté over medium heat for 2 minutes, until limp.
  • Add the tomatoes, olives, gin, salt, and pepper and bring to a simmer.
  • Gently arrange the perch in the tomato sauce.
  • Using a spoon, generously baste the fish with the sauce.
  • Cover and simmer for10 minutes or until cooked through.
  • Sprinkle with chives.
