Piña Colada
Piña coladas are enormously popular at Mexican seaside resorts. You know someone ordered one when you see a wedge of fresh pineapple decorating the glass and a bright red cherry perched on top. If you can't grab a plane and head south of the border, get in the vacation spirit by making these at home. Piña coladas are a popular beverage to serve with brunch

Ingrediënten

Makes 2 servings

  • 4 ounces white rum
  • 5 ounces pineapple juice
  • 1 teaspoon fresh lime juice
  • 2 ounces canned sweet cream of coconut such as Coco Lopez
  • ¾ cup crushed ice
  • 4 pineapple wedges
  • 4 Maraschino cherries

Instructies

  • Put all of the ingredients, except the pineapple wedges and the cherries, in a blender and blend on high speed until frothy and smooth.
  • Divide between 2 (8-ounce) stemmed wine glasses.
  • Skewer the pineapple wedges and cherries on cocktail picks to garnish the drinks.
  • Serve.

Notes / Tips / Wine Advice:

To crack ice cubes, put them in a heavy plastic bag, remove air from the bag, seal it, then put the bag on a cutting board. With a hammer or heavy rolling pin, gently break cubes into chips.
