Fruit Pizza “Pie”
A fun twist on traditional fruit pies, this fruit pizza is made with a sweet, cookie-like crust, cream cheese filling, and topped with a colorful array of fresh fruit. Perfect for any summer gathering or picnic!

Ingrediënten
For the Crust:
- 1 roll of sugar cookie dough or homemade cookie dough
For the Filling:
- 200 g cream cheese softened
- ¼ cup powdered sugar
- 1 tsp vanilla extract
For the Topping:
- ½ cup strawberries sliced
- ½ cup blueberries
- ½ cup kiwi peeled and sliced
- ½ cup mandarin orange segments fresh or canned
- ¼ cup pineapple chunks
- 1 tbsp honey optional, for drizzling
Instructies
- Preheat the oven to 180°C (350°F).
- Roll out the sugar cookie dough on a lightly floured surface and shape it into a large pizza crust on a baking sheet or pizza stone.
- Bake the cookie crust for 10-12 minutes or until golden brown.
- Allow it to cool completely.
- While the crust cools, mix the softened cream cheese, powdered sugar, and vanilla extract in a bowl until smooth.
- Once the crust has cooled, spread the cream cheese mixture evenly over the crust.
- Arrange the fresh fruit (strawberries, blueberries, kiwi, mandarin oranges, and pineapple) on top of the cream cheese layer in a colorful, decorative pattern.
- If desired, drizzle a little honey over the top for extra sweetness.
- Slice and serve chilled.
