For the dough, knead all the ingredients together and let rest for 30 minutes.
Preheat oven to 340 °F (170 °C).
For the quark filling, cream the butter with honey.
Mix in the quark, raisins, and egg yolks.
Roll out to a baking sheet sized rectangle on a floured work surface.
Lay on a buttered baking sheet and raise up a border around the edge.
Cover the dough with a thin layer of quark filling and lay the halved, pitted plums on top (skin side down).
Knead the butter with honey and whole wheat flour and roll between your hands to created streusel crumbs.
Sprinkle with the streusel and bake for about 30 minutes.
