Equipment

  • Medium-size bowl, Muffin tin, Nonstick cooking spray, Oven

Ingrediënten

  • ½ cup 72 g vital wheat gluten flour
  • ¼ cup 30 g nutritional yeast
  • 2 tablespoons 20 g brown rice flour
  • ½ teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • ½ teaspoon fine sea salt
  • ¾ cup 180 ml unsweetened soy or other nondairy milk
  • 2 tablespoons 32 g tahini
  • Nonstick cooking spray

Instructies

  • Preheat the oven to 375°F (190°C, or gas mark 5).
  • Lightly coat 6 standard muffin cups with spray.
  • Combine the wheat gluten, yeast, flour, garlic powder, Italian seasoning, and salt in a medium-size bowl.
  • Stir in the milk and tahini until well combined.
  • Add optional ingredients, such as olives or roasted peppers, if desired.
  • Divide the batter equally among the muffin cups.
  • Bake for 20 minutes, until the seitan bites are light golden brown and firm to the touch.
