Pumpkin Bread from Julia Korenivska

Ingrediënten

  • 15 oz can pumpkin
  • 2 cups flour
  • 1 ½ cups sugar
  • 6 eggs beaten
  • 3 oz vanilla pudding cooked
  • 3 oz butterscotch pudding cooked
  • cup cinnamon applesauce
  • 1 tsp cinnamon
  • ½ cup oil
  • 1 tbsp. pumpkin pie spice
  • 2 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt

Cream Cheese Glaze

  • 4 oz cream cheese softened
  • ½ cup powdered sugar
  • 3 tbsp milk

Instructies

  • In a large bowl, whisk together the pumpkin + eggs + applesauce + oil.
  • In another bowl, mix all the other ingredients.
  • Stir in the pumpkin mixture into the flour mixture until combined.
  • Pour the mixture into greased loaf pans and bake at 3500 F for 55-60
  • minutes or until a toothpick inserted in the center comes out clean.
  • Place the pans on a wire rack for about 10 minutes.
  • Remove the loaf from the pans and cool completely on wire racks.

For the Cream Cheese Glaze:

  • Beat cream cheese with an electric mixer for 1-2 minutes.
  • Add in the powdered sugar and continue mix for a minute.
  • Next, pour in the milk and continue mixing on low speed until smooth.
  • Drizzle your bread with the cream cheese glaze or serve as a dipping side if desired.
