Raisin-Nut Cocoa Bread

If you’re going to make the effort for homemade bread, you might as well make 2 loaves. Keep one and give the other away, or freeze it for down the road.

Makes 2 loaves

Prep: 27 min. / bake: 40 min / Cook: 10 min. / Rise: 1 hr., 15 min. / Stand: 5 min.

  • 2 cups water
  • 1 cup uncooked regular oats
  • 1 teaspoon salt divided
  • 6 cups all-purpose flour divided
  • ½ cup cocoa
  • 2 ¼-ounce envelopes active dry yeast
  • ½ cup warm water 100° to 110°
  • 1 cup firmly packed light brown sugar
  • 2 tablespoons butter softened
  • 1 cup chopped walnuts
  • 1 cup raisins
  • Melted butter

Instructies

  • Combine 2 cups water, oats, and ½ teaspoon salt in a medium saucepan.
  • Bring to a boil; reduce heat, and simmer, uncovered, 5 minutes, stirring occasionally.
  • Pour oat mixture into a large mixing bowl, and cool to lukewarm.
  • Combine 2 cups flour, cocoa, and remaining ½ teaspoon salt.
  • Combine yeast and warm water in a 1-cup liquid measuring cup; let stand 5 minutes.
  • Add flour mixture, yeast mixture, sugar, and softened butter to oat mixture.
  • Beat at low speed with an electric mixer until dry ingredients are moistened.
  • Beat at medium speed 2 minutes.
  • Stir in walnuts and raisins.
  • Gradually stir in enough remaining flour to make a soft dough.
  • Turn dough out onto a floured surface, and knead until smooth and elastic (6 to 8 minutes).
  • Place dough in a well-greased bowl, turning to grease top.
  • Cover and let rise in a warm place (85°), free from drafts, 45 minutes or until doubled in bulk.
  • Punch dough down, and divide in half.
  • Roll half of dough into a 15- x 7-inch rectangle on a lightly floured surface.
  • Roll up dough, starting at short side, pressing firmly to eliminate air pockets; pinch seams and ends to seal.
  • Place loaf, seam side down, in a greased 9- x 5-inch loaf pan.
  • Repeat procedure with remaining dough.
  • Cover and let rise in a warm place, free from drafts, 30 minutes or until doubled.
  • Bake at 375° for 35 to 40 minutes or until loaves sound hollow when tapped.
  • Remove bread from pans; immediately brush with melted butter.
  • Cool completely on wire racks.
