Raisin-Nut Cocoa Bread
If you’re going to make the effort for homemade bread, you might as well make 2 loaves. Keep one and give the other away, or freeze it for down the road.

Instructies
Combine 2 cups water, oats, and ½ teaspoon salt in a medium saucepan.
Bring to a boil; reduce heat, and simmer, uncovered, 5 minutes, stirring occasionally.
Pour oat mixture into a large mixing bowl, and cool to lukewarm.
Combine 2 cups flour, cocoa, and remaining ½ teaspoon salt.
Combine yeast and warm water in a 1-cup liquid measuring cup; let stand 5 minutes.
Add flour mixture, yeast mixture, sugar, and softened butter to oat mixture.
Beat at low speed with an electric mixer until dry ingredients are moistened.
Beat at medium speed 2 minutes.
Stir in walnuts and raisins.
Gradually stir in enough remaining flour to make a soft dough.
Turn dough out onto a floured surface, and knead until smooth and elastic (6 to 8 minutes).
Place dough in a well-greased bowl, turning to grease top.
Cover and let rise in a warm place (85°), free from drafts, 45 minutes or until doubled in bulk.
Punch dough down, and divide in half.
Roll half of dough into a 15- x 7-inch rectangle on a lightly floured surface.
Roll up dough, starting at short side, pressing firmly to eliminate air pockets; pinch seams and ends to seal.
Place loaf, seam side down, in a greased 9- x 5-inch loaf pan.
Repeat procedure with remaining dough.
Cover and let rise in a warm place, free from drafts, 30 minutes or until doubled.
Bake at 375° for 35 to 40 minutes or until loaves sound hollow when tapped.
Remove bread from pans; immediately brush with melted butter.
Cool completely on wire racks.
