Ingredients

  • 1 pound boneless skinless chicken breasts, cut into 1-inch pieces
  • ¼ cup ketchup
  • 1 tablespoon tomato-based chili sauce such as Heinz
  • 1 tablespoon soy sauce
  • 1 tablespoon rice vinegar
  • 2 teaspoons vegetable oil
  • 1 teaspoon hot sauce such as Tabasco
  • ½ teaspoon garlic powder
  • ¼ teaspoon cayenne pepper
  • 2 scallions thinly sliced
  • Cooked white rice for serving

Instructions

  • In a bowl, combine the chicken pieces with ketchup, tomato-based chili sauce, soy sauce, rice vinegar, vegetable oil, hot sauce, garlic powder, cayenne pepper, and three-quarters of the sliced scallions.
  • Toss until evenly coated.
  • Scrape the chicken and sauce into a 7-inch round cake pan insert, metal cake pan, or foil pan.
  • Preheat the air fryer to 350°F.
  • Place the pan in the air fryer and cook until the chicken is cooked through and the sauce is reduced to a thick glaze, about 20 minutes, flipping the chicken pieces halfway through.
  • Remove the pan from the air fryer.
  • Spoon the chicken and sauce over cooked white rice and top with the remaining sliced scallions.
