Air Fried Manchurian-Style Chicken

Ingredients
- 1 pound boneless skinless chicken breasts, cut into 1-inch pieces
- ¼ cup ketchup
- 1 tablespoon tomato-based chili sauce such as Heinz
- 1 tablespoon soy sauce
- 1 tablespoon rice vinegar
- 2 teaspoons vegetable oil
- 1 teaspoon hot sauce such as Tabasco
- ½ teaspoon garlic powder
- ¼ teaspoon cayenne pepper
- 2 scallions thinly sliced
- Cooked white rice for serving
Instructions
- In a bowl, combine the chicken pieces with ketchup, tomato-based chili sauce, soy sauce, rice vinegar, vegetable oil, hot sauce, garlic powder, cayenne pepper, and three-quarters of the sliced scallions.
- Toss until evenly coated.
- Scrape the chicken and sauce into a 7-inch round cake pan insert, metal cake pan, or foil pan.
- Preheat the air fryer to 350°F.
- Place the pan in the air fryer and cook until the chicken is cooked through and the sauce is reduced to a thick glaze, about 20 minutes, flipping the chicken pieces halfway through.
- Remove the pan from the air fryer.
- Spoon the chicken and sauce over cooked white rice and top with the remaining sliced scallions.
