Base Recipe

  • 3 pounds chicken wings
  • Chosen marinade see below
  • Cooking spray

Sticky Sesame Marinade:

  • 4 thinly sliced green onions
  • 3 crushed cloves of garlic
  • ¼ cup soy sauce
  • ¼ cup Chinese cooking wine Shaoxing
  • 3 teaspoons finely grated ginger
  • 2 tablespoons brown sugar
  • 2 tablespoons toasted sesame seeds for serving
  • Extra sliced green onions for serving

Sticky Pomegranate Marinade:

  • 1 cup firmly packed brown sugar
  • 1.5 cups pomegranate juice
  • 3 teaspoons grated orange rind
  • 2 crushed cloves of garlic
  • 1.5 tablespoons Dijon mustard
  • 1.5 tablespoons Worcestershire sauce
  • cup ketchup
  • Pomegranate seeds for serving

Smoky Barbecue Marinade:

  • ½ cup honey
  • ½ cup smoky barbecue sauce
  • 2 tablespoons teriyaki sauce
  • Thinly sliced long red chili for serving
  • Lime wedges for serving

Instructions

Sticky Sesame Marinade:

  • In a bowl, combine thinly sliced green onions, crushed cloves of garlic, soy sauce, Chinese cooking wine (Shaoxing), finely grated ginger, and brown sugar.
  • Serve the cooked wings topped with toasted sesame seeds and extra sliced green onions.

Sticky Pomegranate Marinade:

  • In a saucepan, stir together brown sugar, pomegranate juice, grated orange rind, crushed cloves of garlic, Dijon mustard, Worcestershire sauce, and ketchup.
  • Bring the mixture to a boil and stir occasionally over medium heat for 10 minutes or until it is reduced by half.
  • Serve the cooked wings topped with pomegranate seeds.

Smoky Barbecue Marinade:

  • In a bowl, combine honey, smoky barbecue sauce, and teriyaki sauce.

Notes / Tips / Wine Advice:

Serve the cooked wings with thinly sliced long red chili and lime wedges.
