Air Fryer Lamb Chops

Ingredients

  • 8 loin lamb chops 1 and 1/4″ wide
  • 2 tbsp. mustard dijon or whole grain
  • ½ tsp. olive oil
  • 1 tsp. tarragon any dried herb of your choice
  • 1 tbsp. lemon juice
  • salt and pepper

Instructions

  • Heat a grill pan or a skillet to high.
  • Add one tbsp. olive oil to pan and swirl to coat all sides
  • Add chops in on ends and cook it for 2 mins.
  • Next turn and Add on narrow side the chop side, not the top and bottom and cook it for 2 more minutes.
  • Repeat with other narrow side for 2 mins.
  • Next cook up to 4 mins per side continuously until lamb reaches medium-rare 130°.
  • I cut into one chop to ensure it’s a doneness I’m happy with if I don’t have a thermometer handy.
  • Move out from skillet and let to rest for 5 minutes.
  • Next serve immediately.
