Almond-infused Fruit Gelatin Delight

Ingredients

  • 1 envelope unflavored gelatin
  • 1 cup water
  • ½ cup sugar
  • ½ cup milk
  • 1 tablespoon almond extract
  • 1 13- oz. can fruit with syrup or 1–2 cups fresh fruit cut into bite-sized pieces

Instructions

  • In a saucepan, dissolve the gelatin in water.
  • Place over high heat and bring it to a boil, then reduce the heat to low.
  • Add sugar and stir until thoroughly dissolved.
  • Stir in milk and almond extract.
  • Mix well.
  • Pour the mixture into a deep square pan and allow it to cool to room temperature.
  • Then refrigerate to chill.
  • When cool, cut the gelatin into cubes and serve topped with fruit and syrup.
  • If there is not enough syrup with the fruit, make a syrup by mixing 1 cup of water with 3 tablespoons sugar and 1/2 teaspoon almond extract.
  • Heat until sugar dissolves.
