Almond-infused Fruit Gelatin Delight

Ingredients
- 1 envelope unflavored gelatin
- 1 cup water
- ½ cup sugar
- ½ cup milk
- 1 tablespoon almond extract
- 1 13- oz. can fruit with syrup or 1–2 cups fresh fruit cut into bite-sized pieces
Instructions
- In a saucepan, dissolve the gelatin in water.
- Place over high heat and bring it to a boil, then reduce the heat to low.
- Add sugar and stir until thoroughly dissolved.
- Stir in milk and almond extract.
- Mix well.
- Pour the mixture into a deep square pan and allow it to cool to room temperature.
- Then refrigerate to chill.
- When cool, cut the gelatin into cubes and serve topped with fruit and syrup.
- If there is not enough syrup with the fruit, make a syrup by mixing 1 cup of water with 3 tablespoons sugar and 1/2 teaspoon almond extract.
- Heat until sugar dissolves.
