Ingredients
- 6 cups chopped fresh pineapple
- Zest and juice from 2 oranges
- 6 cups sugar
- 1 cup coconut flaked
- 1 cup chopped drained maraschino cherries
Instructions
- In a large saucepan, combine pineapple with orange juice and zest.
- Boil for 10 minutes, or until pineapple is soft.
- Add sugar and boil hard for 15 minutes, stirring often.
- Add coconut and cherries.
- Boil for 5 more minutes.
- Ladle into clean jars and process for 10 minutes in boiling-water bath.
