Apple Pumpkin Muffins with Streusel Topping

Ingredients

Muffins

  • cups all-purpose flour
  • 2 cups sugar
  • 1 T. pumpkin pie spice
  • 1 tsp. baking soda
  • ½ tsp. salt
  • 2 eggs
  • ¾ cup cooked pumpkin or use canned pumpkin
  • ½ cup cooking oil
  • 2 cups apples peeled and finely chopped

Streusel Topping

  • 2 T. flour
  • ¼ cup sugar
  • ½ tsp. cinnamon
  • 2 tsp. butter softened

Instructions

  • Preheat the oven to 350°.
  • In a large bowl, mix together the flour, sugar, pumpkin pie spice, baking soda, and salt.
  • In another bowl, beat together the eggs, pumpkin, and cooking oil.
  • Add to the dry ingredients and stir until just blended.
  • Don’t overmix.
  • Stir in the apples.
  • Fill greased muffin cups about ¾ full.
  • For topping: Mix together the flour, sugar, and cinnamon; add the butter and mix until combined.
  • Sprinkle on top of the muffins.
  • Bake for 30 to 35 minutes or until done.
  • Remove the muffins from the pan and cool on a wire rack.

This makes quite a large batch, so you may have to bake in shifts.
