Apple Pumpkin Muffins with Streusel Topping
Ingredients
Muffins
- 2½ cups all-purpose flour
- 2 cups sugar
- 1 T. pumpkin pie spice
- 1 tsp. baking soda
- ½ tsp. salt
- 2 eggs
- ¾ cup cooked pumpkin or use canned pumpkin
- ½ cup cooking oil
- 2 cups apples peeled and finely chopped
Streusel Topping
- 2 T. flour
- ¼ cup sugar
- ½ tsp. cinnamon
- 2 tsp. butter softened
Instructions
- Preheat the oven to 350°.
- In a large bowl, mix together the flour, sugar, pumpkin pie spice, baking soda, and salt.
- In another bowl, beat together the eggs, pumpkin, and cooking oil.
- Add to the dry ingredients and stir until just blended.
- Don’t overmix.
- Stir in the apples.
- Fill greased muffin cups about ¾ full.
- For topping: Mix together the flour, sugar, and cinnamon; add the butter and mix until combined.
- Sprinkle on top of the muffins.
- Bake for 30 to 35 minutes or until done.
- Remove the muffins from the pan and cool on a wire rack.

This makes quite a large batch, so you may have to bake in shifts.
