Apple Pumpkin Muffins with Streusel Topping

or use canned pumpkin

peeled and finely chopped
Streusel Topping

flour

sugar

cinnamon

butter
softened
Instructies
Preheat the oven to 350°.
In a large bowl, mix together the flour, sugar, pumpkin pie spice, baking soda, and salt.
In another bowl, beat together the eggs, pumpkin, and cooking oil.
Add to the dry ingredients and stir until just blended.
Don’t overmix.
Stir in the apples.
Fill greased muffin cups about ¾ full.
For topping: Mix together the flour, sugar, and cinnamon; add the butter and mix until combined.
Sprinkle on top of the muffins.
Bake for 30 to 35 minutes or until done.
Remove the muffins from the pan and cool on a wire rack.
Notes / Tips / Wine Advice:
This makes quite a large batch, so you may have to bake in shifts.
