Ingredients
- 1 tablespoon olive oil
- 8 ounces Padrón peppers
- 2 pounds pork loin sliced
- 1 teaspoon Celtic salt
- 1 teaspoon paprika
- 1 heaped tablespoon capers drained
- 8 green olives pitted and halved
Instructions
- Drizzle the olive oil over the Padrón peppers.
- Place them in the air fryer basket and cook at 400°F (200°C) for 10 minutes, turning occasionally until blistered and tender-crisp.
- Reduce the air fryer temperature to 360°F (182°C).
- Season the pork loin slices with Celtic salt and paprika.
- Add the pork and capers to the air fryer basket.
- Cook for 16 minutes, flipping the pork halfway through.
- Serve the cooked pork with the reserved Padrón peppers and garnish with halved green olives.
