Ingredients
For the Dum Kebab
- 1 ½ pounds ground chuck
- 1 egg
- 1 medium-sized leek chopped
- 2 garlic cloves smashed
- 2 tablespoons fresh parsley chopped
- 1 teaspoon fresh rosemary chopped
- Sea salt to taste
- ½ teaspoon ground black pepper
- ½ teaspoon chili powder
- 1 teaspoon garam masala
- 1 teaspoon papaya paste
- 1 teaspoon ginger paste
- ½ teaspoon ground cumin
For the Raita Sauce
- 1 small-sized cucumber grated and squeezed
- A pinch of salt
- 1 cup full-fat yogurt
- ¼ cup fresh cilantro coarsely chopped
- 1 tablespoon fresh lime juice
Instructions
- Combine all Dum Kebab ingredients in a mixing bowl until well incorporated.
- Press the mixture evenly into a baking pan.
- Preheat the Air Fryer to 360°F.
- Cook the Dum Kebab for 15 minutes.
- Use a meat thermometer to ensure doneness.
- While the kebab cooks, mix all ingredients for the raita sauce in a separate bowl.
- Serve the warm Dum Kebab with the cucumber raita sauce on the side.
