Autumn Chicken Stew

Ingredients
- 1 squash cubed
- 1 zucchini cubed
- 3 yams or sweet potatoes quartered
- 4 carrots sliced
- 2 celery stalks chopped
- 1 onion diced
- 2 garlic cloves minced
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 cup apple juice or apple cider
Instructions
- Place squash, zucchini and yams on the bottom of a slow cooker.
- Cover with apple juice or apple cider.
- Place halved chicken breasts on top and add carrots, celery, onion, garlic, salt and pepper.
- Cover and cook on low for 6 – 7 hours.
