  • 25 small Brussels sprouts halved
  • 2 mini sweet capsicums seeded and diced
  • 1 small brown onion peeled and diced
  • 3 slices sugar-free bacon diced
  • 2 tbsp fresh orange juice
  • ¼ tsp salt
  • 1 tsp orange zest

Instructions

  • Preheat the air fryer to 180°C (350°F) for 3 minutes.
  • In a medium bowl, combine all ingredients except the orange zest.
  • Add the mixture to the air fryer basket (ungreased).
  • Cook for 6 minutes, then toss the mixture and cook for another 6 minutes until crispy and caramelized.
  • Transfer to a serving dish and sprinkle with orange zest.
  • Serve warm, optionally topped with a poached or fried egg.
