Bacon Vegetable Morning Hash
To round out thissavoury breakfast hash, serve it with an egg on top. Poached or over-mediumeggs are great, as the runny yolk acts as a sauce for the dish. But if you arein a hurry, just scramble an egg and add it to your bowl. And if you arefeeling a little cheesy, throw in some grated Cheddar cheese!

- 25 small Brussels sprouts halved
- 2 mini sweet capsicum seeded and diced
- 1 small brown onion peeled and diced
- 3 slices sugar-free bacon diced
- 2 tablespoons fresh orange juice
- ¼ teaspoon salt
- 1 teaspoon orange zest
Instructions
- Preheat air fryer at 180°C for 3 minutes.
- In a medium bowl, combine all ingredients except orange zest.
- Add mixture to ungreased air fryer basket.
- Cook for 6 minutes, then toss and cook for an additional 6 minutes.
- Serve warm.
