Crispy Bacon & Vegetable Morning Hash
A hearty and flavorful breakfast hash with crispy bacon, Brussels sprouts, and sweet capsicums, balanced with a touch of citrus zest. Perfect on its own or topped with an egg!

Ingredients
- 25 small Brussels sprouts halved
- 2 mini sweet capsicums seeded and diced
- 1 small brown onion peeled and diced
- 3 slices sugar-free bacon diced
- 2 tbsp fresh orange juice
- ¼ tsp salt
- 1 tsp orange zest
Instructions
- Preheat the air fryer to 180°C (350°F) for 3 minutes.
- In a medium bowl, combine all ingredients except the orange zest.
- Add the mixture to the air fryer basket (ungreased).
- Cook for 6 minutes, then toss the mixture and cook for another 6 minutes until crispy and caramelized.
- Transfer to a serving dish and sprinkle with orange zest.
- Serve warm, optionally topped with a poached or fried egg.
Notes / Tips / Wine Advice:
SPICE IT UP
If you’re feeling spicy, swap the mini sweet capsicums for a poblano or jalapeño chilli. It will be sure to start your morning with a kick!
