Bacon Vegetable Morning Hash

To round out thissavoury breakfast hash, serve it with an egg on top. Poached or over-mediumeggs are great, as the runny yolk acts as a sauce for the dish. But if you arein a hurry, just scramble an egg and add it to your bowl. And if you arefeeling a little cheesy, throw in some grated Cheddar cheese!

Ingredients

  • 25 small Brussels sprouts halved
  • 2 mini sweet capsicum seeded and diced
  • 1 small brown onion peeled and diced
  • 3 slices sugar-free bacon diced
  • 2 tablespoons fresh orange juice
  • ¼ teaspoon salt
  • 1 teaspoon orange zest

Instructions

  • Preheat air fryer at 180°C for 3 minutes.
  • In a medium bowl, combine all ingredients except orange zest.
  • Add mixture to ungreased air fryer basket.
  • Cook for 6 minutes, then toss and cook for an additional 6 minutes.
  • Serve warm.

SPICE IT UP

If you’re feeling spicy, swap the mini sweet capsicums for a poblano or jalapeño chilli. It will be sure to start your morning with a kick!
