Baked Basmati with Artichokes & Almonds
Elevate your rice dish with the savory blend of basmati rice, tender artichokes, and crunchy almonds, all infused with the bright flavors of lemon.
Ingredients
- 1 ½ cups boiling water
- 1 cup basmati rice
- 1 box 10 oz. frozen artichokes, thawed and patted dry
- ½ cup chopped shallots
- 3 tablespoons olive oil
- 2 cloves garlic finely chopped
- 3 tablespoons sliced almonds toasted
- 1 lemon zested (about 1 1/2 tsp.) and juiced (about 1/4 cup)
- 1 tablespoon chopped fresh flat-leaf parsley leaves
- Salt and pepper to taste
Instructions
- In a small baking pan, combine boiling water, basmati rice, thawed artichokes, chopped shallots, olive oil, and finely chopped garlic.
- Season with 1 teaspoon of salt.
- Stir well.
- Cover the pan and bake in the preheated oven until the rice is tender, approximately 28 minutes.
- Using a fork, gently stir in the toasted sliced almonds, lemon zest, lemon juice, and chopped fresh parsley.
- Season the dish with pepper to taste.
