Baked Basmati with Artichokes & Almonds

Ingredients

  • 1 ½ cups boiling water
  • 1 cup basmati rice
  • 1 box 10 oz. frozen artichokes, thawed and patted dry
  • ½ cup chopped shallots
  • 3 tablespoons olive oil
  • 2 cloves garlic finely chopped
  • 3 tablespoons sliced almonds toasted
  • 1 lemon zested (about 1 1/2 tsp.) and juiced (about 1/4 cup)
  • 1 tablespoon chopped fresh flat-leaf parsley leaves
  • Salt and pepper to taste

Instructions

  • In a small baking pan, combine boiling water, basmati rice, thawed artichokes, chopped shallots, olive oil, and finely chopped garlic.
  • Season with 1 teaspoon of salt.
  • Stir well.
  • Cover the pan and bake in the preheated oven until the rice is tender, approximately 28 minutes.
  • Using a fork, gently stir in the toasted sliced almonds, lemon zest, lemon juice, and chopped fresh parsley.
  • Season the dish with pepper to taste.
