Baked Basmati with Artichokes & Almonds

chopped shallots

lemon
zested (about 1 1/2 tsp.) and juiced (about 1/4 cup)

chopped fresh flat-leaf parsley leaves

Salt and pepper to taste
Instructies
In a small baking pan, combine boiling water, basmati rice, thawed artichokes, chopped shallots, olive oil, and finely chopped garlic.
Season with 1 teaspoon of salt.
Stir well.
Cover the pan and bake in the preheated oven until the rice is tender, approximately 28 minutes.
Using a fork, gently stir in the toasted sliced almonds, lemon zest, lemon juice, and chopped fresh parsley.
Season the dish with pepper to taste.
