Ingredients

Makes 2 servings

  • 10 ice cubes
  • ripe bananas peeled and cut into chunks
  • 4 ounces canned sweet cream of coconut such as Coco Lopez
  • ½ cup pineapple juice
  • 4 ounces dark rum
  • 2 tablespoons fresh lime juice
  • 2 mint sprigs

Instructions

  • Put the ice cubes, bananas, coconut cream, pineapple juice, rum, and lime juice in a blender.
  • Blend until very smooth.
  • Divide between 2 (8-ounce) stemmed glasses.
  • Garnish each glass with a mint sprig.
