Barbecue Jackfruit Lettuce Wraps with Coleslaw
Whether you like your barbecue sauce spicy or neutral, choose a sugar-free version to keep things low-carb. The jackfruit will take on its flavour, and the cool coleslaw will meld nicely with whatever sauce you choose.

For Coleslaw
- 1 cup prepackaged coleslaw mix
- ¼ cup vegan mayonnaise
- 2 teaspoons erythritol sweetener
- ½ teaspoon apple cider vinegar
- ¼ teaspoon salt
- ¼ teaspoon freshly ground black pepper
For Jackfruit Wraps
- 570 grams canned green jackfruit in brine drained and diced
- ⅔ cup reduced-sugar barbecue sauce divided
- 6 large leaves iceberg lettuce
Instructions
To make Coleslaw:
- In a medium bowl, combine all ingredients.
- Refrigerate covered until ready to use.
To make Jackfruit Wraps:
- Preheat air fryer at 190°C for 3 minutes.
- Toss ⅓ cup barbecue sauce with jackfruit in a medium bowl.
- Place jackfruit in air fryer basket lightly greased with olive oil and cook for 5 minutes.
- Shake basket.
- Cook for an additional 5 minutes.
- Transfer jackfruit to a medium bowl.
- Add remaining sauce.
- Using two forks, pull apart jackfruit until it resembles pulled pork.
- Serve jackfruit on lettuce leaves topped with coleslaw.
