570gramscanned green jackfruit in brinedrained and diced
⅔cupreduced-sugar barbecue saucedivided
6large leaves iceberg lettuce
Instructies
To make Coleslaw:
In a medium bowl, combine all ingredients.
Refrigerate covered until ready to use.
To make Jackfruit Wraps:
Preheat air fryer at 190°C for 3 minutes.
Toss ⅓ cup barbecue sauce with jackfruit in a medium bowl.
Place jackfruit in air fryer basket lightly greased with olive oil and cook for 5 minutes.
Shake basket.
Cook for an additional 5 minutes.
Transfer jackfruit to a medium bowl.
Add remaining sauce.
Using two forks, pull apart jackfruit until it resembles pulled pork.
Serve jackfruit on lettuce leaves topped with coleslaw.
