Black Bean Nachos

Nachos de Frijoles Negros
Crisp corn chips called tostaditas spread with refried black beans and topped with sour cream and salsa is a favorite botana, or quick snack, almost everywhere.

Ingredients

Makes 36 nachos

  • 36 Toasted Corn Tortilla Chips or purchased
  • 1 cup cooked black beans Basic Pot Beans, or canned
  • 1 tablespoon vegetable oil or lard
  • 2 tablespoons chopped white onion
  • 1 medium garlic clove finely chopped
  • ½ teaspoon dried oregano Mexican variety preferred, crumbled
  • ¼ teaspoon ground cumin
  • Salt to taste optional

Instructions

  • Prepare the tortilla chips, if using homemade.
  • Then, drain the beans, but do not rinse.
  • Set aside.
  • Heat the oil in a medium skillet over medium heat.
  • Add the onion, garlic, oregano, and cumin.
  • Cook, stirring, until the onion is softened, 3 to 4 minutes.
  • Add the beans, and cook, mashing and stirring them until thick.
  • Spread a bit of the beans on the tortilla chips.
  • Add a dollop of sour cream and salsa.
  • Serve while the beans are warm.
