Black Bean Nachos
Nachos de Frijoles NegrosCrisp corn chips called tostaditas spread with refried black beans and topped with sour cream and salsa is a favorite botana, or quick snack, almost everywhere.
Ingredients
Makes 36 nachos
- 36 Toasted Corn Tortilla Chips or purchased
- 1 cup cooked black beans Basic Pot Beans, or canned
- 1 tablespoon vegetable oil or lard
- 2 tablespoons chopped white onion
- 1 medium garlic clove finely chopped
- ½ teaspoon dried oregano Mexican variety preferred, crumbled
- ¼ teaspoon ground cumin
- Salt to taste optional
Instructions
- Prepare the tortilla chips, if using homemade.
- Then, drain the beans, but do not rinse.
- Set aside.
- Heat the oil in a medium skillet over medium heat.
- Add the onion, garlic, oregano, and cumin.
- Cook, stirring, until the onion is softened, 3 to 4 minutes.
- Add the beans, and cook, mashing and stirring them until thick.
- Spread a bit of the beans on the tortilla chips.
- Add a dollop of sour cream and salsa.
- Serve while the beans are warm.
