Black Bean Nachos

Crisp corn chips called tostaditas spread with refried black beans and topped with sour cream and salsa is a favorite botana, or quick snack, almost everywhere.

Makes 36 nachos

Toasted Corn Tortilla Chips
or purchased
▢
1
cup
cooked black beans
Basic Pot Beans, or canned
▢
1
tablespoon
vegetable oil or lard
▢
2
tablespoons
chopped white onion
▢
1
medium
garlic clove
finely chopped
▢
½
teaspoon
dried oregano
Mexican variety preferred, crumbled
▢
¼
teaspoon
ground cumin
▢
Salt to taste

Instructies
Prepare the tortilla chips, if using homemade.
Then, drain the beans, but do not rinse.
Set aside.
Heat the oil in a medium skillet over medium heat.
Add the onion, garlic, oregano, and cumin.
Cook, stirring, until the onion is softened, 3 to 4 minutes.
Add the beans, and cook, mashing and stirring them until thick.
Spread a bit of the beans on the tortilla chips.
Add a dollop of sour cream and salsa.
Serve while the beans are warm.
