Bœuf Bourguignon

Ingredients
- 6 slices bacon
- 2-3 lbs beef – cut
- 1 carrot
- 1 onion – sliced
- 3 tbsp flour
- 10 ¾ oz can beef broth
- 1 tbsp tomato paste
- 2 garlic cloves – minced
- ¾ tsp thyme
- 1 bay leaf
- ½ lb pearl onion
- ½-1 lb mushroom
- 1 tbsp butter
- ½ cup red wine
- Salt & pepper
Instructions
- Fry 6 strips bacon until crisp
- Cut into ½ inch pieces
- Brown beef in the bacon grease
- Put beef into crock pot
- Brown carrot and onion
- Add to crock pot
- Add salt & pepper to crock pot
- Stir in 3 tbsp flour and 10 ¾ oz can beef broth
- Stir well
Add to crock pot:
- Bacon
- Tomato paste
- Garlic
- Thyme
- Bay leaf
- Pearl onion
- Cook on low for 8 hours
- Sauté mushrooms in butter
- Add mushrooms and red wine to crock pot
- Cook one additional hour
