Ingredients

  • 6 slices bacon
  • 2-3 lbs beef – cut
  • 1 carrot
  • 1 onion – sliced
  • 3 tbsp flour
  • 10 ¾ oz can beef broth
  • 1 tbsp tomato paste
  • 2 garlic cloves – minced
  • ¾ tsp thyme
  • 1 bay leaf
  • ½ lb pearl onion
  • ½-1 lb mushroom
  • 1 tbsp butter
  • ½ cup red wine
  • Salt & pepper

Instructions

  • Fry 6 strips bacon until crisp
  • Cut into ½ inch pieces
  • Brown beef in the bacon grease
  • Put beef into crock pot
  • Brown carrot and onion
  • Add to crock pot
  • Add salt & pepper to crock pot
  • Stir in 3 tbsp flour and 10 ¾ oz can beef broth
  • Stir well

Add to crock pot:

  • Bacon
  • Tomato paste
  • Garlic
  • Thyme
  • Bay leaf
  • Pearl onion
  • Cook on low for 8 hours
  • Sauté mushrooms in butter
  • Add mushrooms and red wine to crock pot
  • Cook one additional hour
