Ingredients
- ½ recipe Basic Long Loaf dough
- 8 pieces chorizo sausage 3 inches each
- 8 thick slices bacon cut into 3-inch pieces
- Cornmeal or bread crumbs for sprinkling
- 1 large egg lightly beaten, for brushing
Instructions
Prepare Dough:
- Make the bread dough according to steps 1 and 2 of the Basic Long Loaf recipe.
- Once risen, punch down the dough and knead it for about 5 minutes.
- Divide the dough into 8 equal pieces and shape each into a ball.
- Roll out each ball into a 5 x 3-inch rectangle.
Preheat Oven:
- Preheat the oven to 450°F.
Assemble the Buns:
- Place one piece of chorizo and one slice of bacon in the center of each dough rectangle.
- Fold the sides and ends of the dough over the sausage and bacon, pinching and sealing the edges well.
Prepare Baking Sheet:
- Sprinkle a baking sheet with cornmeal or bread crumbs.
- Place the buns seam side down on the prepared baking sheet.
- Let them sit in a warm place (like an unheated oven) for about 30 minutes.
- Brush with Egg and Bake:
- Brush the buns with the beaten egg.
- Bake in the preheated oven for approximately 15 minutes or until they turn golden brown.
Serve:
- Enjoy the Bollo Preñado either hot or at room temperature.
