Brie-Topped Broiled Asparagus Delight

Ingredients

  • 30 very thin asparagus spears cooked, rinsed, and trimmed
  • 6 thin slices of Brie cheese rind removed
  • Grated aged Manchego or Parmesan cheese
  • ¾ teaspoon ground sweet paprika preferably Spanish smoked
  • Extra-virgin olive oil for drizzling

Instructions

  • Preheat the broiler and position the broiler rack about 6 inches from the heat source.
  • If desired, cover the broiler pan with foil for easier cleanup.
  • Arrange the cooked asparagus on the broiler pan in groups of five, with their bottom ends together and the tips spreading out like a fan.
  • Place one slice of Brie cheese across the center of each asparagus fan.
  • Sprinkle the grated aged Manchego or Parmesan cheese and ground sweet paprika over the asparagus and Brie.
  • Drizzle olive oil over the asparagus and cheese.
  • Broil until the cheese is melted, approximately 1 minute.
  • Be cautious not to brown the cheese.
  • Transfer the grilled asparagus with melted Brie to individual serving plates, maintaining the fan shape.
