Brie-Topped Broiled Asparagus Delight
Espárragos con Brie a la Parrilla
Ingredients
- 30 very thin asparagus spears cooked, rinsed, and trimmed
- 6 thin slices of Brie cheese rind removed
- Grated aged Manchego or Parmesan cheese
- ¾ teaspoon ground sweet paprika preferably Spanish smoked
- Extra-virgin olive oil for drizzling
Instructions
- Preheat the broiler and position the broiler rack about 6 inches from the heat source.
- If desired, cover the broiler pan with foil for easier cleanup.
- Arrange the cooked asparagus on the broiler pan in groups of five, with their bottom ends together and the tips spreading out like a fan.
- Place one slice of Brie cheese across the center of each asparagus fan.
- Sprinkle the grated aged Manchego or Parmesan cheese and ground sweet paprika over the asparagus and Brie.
- Drizzle olive oil over the asparagus and cheese.
- Broil until the cheese is melted, approximately 1 minute.
- Be cautious not to brown the cheese.
- Transfer the grilled asparagus with melted Brie to individual serving plates, maintaining the fan shape.
