very thin asparagus spears
cooked, rinsed, and trimmed
▢
6
thin slices
of Brie cheese
rind removed
▢
Grated aged Manchego or Parmesan cheese
▢
¾
teaspoon
ground sweet paprika
preferably Spanish smoked

Extra-virgin olive oil
for drizzling
Instructions
Preheat the broiler and position the broiler rack about 6 inches from the heat source.
If desired, cover the broiler pan with foil for easier cleanup.
Arrange the cooked asparagus on the broiler pan in groups of five, with their bottom ends together and the tips spreading out like a fan.
Place one slice of Brie cheese across the center of each asparagus fan.
Sprinkle the grated aged Manchego or Parmesan cheese and ground sweet paprika over the asparagus and Brie.
Drizzle olive oil over the asparagus and cheese.
Broil until the cheese is melted, approximately 1 minute.
Be cautious not to brown the cheese.
Transfer the grilled asparagus with melted Brie to individual serving plates, maintaining the fan shape.
