Broccoli-Cauliflower Chicken Casserole

- Chicken breast skinless boneless 2 pounds, cut it in 1-inch size Chopped, cauliflower head 1 small (about 4 cups)
- Chopped broccoli bunch 1 (about 4 cups)
- Chopped fresh medium mushrooms ½ pounds
- Chopped onion 1 large
- Finely chopped carrots 2 medium
- Chicken broth low-sodium 1 cup
- Softened cream cheese 4 ounces
- Olive oil 2 tablespoons
- Sage leaves 2 teaspoons dried
- Salt 1 teaspoon
- Pepper ½ teaspoon
- Cheddar cheese 1 cup shredded
- Cooked brown rice as needed
Instructions
- Take a 6-qt.
- slow cooker, add and combine the 1 to 6 ingredients in it.
- Then take a small bowl, whisk the broth, pepper, salt, sage, oil, cream cheese, and pour it on the mixture of chicken.
- Sprinkle it with cheese.
- Covered and cook it on low heat for just 4 to 5 hours, until the chicken and the vegetables get tender.
- Serve it with rice and enjoy your day.
