  • 4 slices prosciutto
  • 750 g medium Brussels sprouts trimmed and outer leaves removed
  • 50 g butter
  • Finely grated zest of 1/4 lemon
  • Salt and black pepper to taste

Instructions

  • Cook the Prosciutto: Heat a frying pan over medium heat.
  • Add the prosciutto slices in batches, cooking them flat until brown and crispy.
  • Remove from the pan and set aside to cool.
  • Cook the Brussels Sprouts: Steam or boil the Brussels sprouts for 7-8 minutes, until just tender.
  • Drain well and return them to the pan.
  • Add Butter and Seasoning: Add the butter, lemon zest, and a pinch of salt to the pan with the Brussels sprouts.
  • Toss the sprouts until well coated with the lemon butter.
  • Serve: Transfer the Brussels sprouts to a serving bowl, tear the crispy prosciutto into pieces and scatter on top.
  • Season with black pepper and serve.
