Caramel Icing
“My mother liked a caramel icing made with brown sugar. She didn’t really have a recipe.” This grandmother’s account is typical. Here is a written approximation of what she enjoyed on chocolate cake.
Ingredients
- ½ cup butter or margarine
- 1 cup brown sugar
- ¼ cup milk
- 1¾ –2 cups sifted confectioner’s sugar
Instructions
- Melt butter in saucepan.
- Add brown sugar and cook over low heat two minutes, stirring constantly.
- Add milk and continue stirring until mixture comes to a boil.
- Remove from heat and cool.
- Add confectioner’s sugar until frosting reaches spreading consistency.
